Cheese Slice

My fudge brownies slice turned out not bad the other day and I thought of modifying it into something new. Well, I got the idea from the cheese slice my juniors made not long ago and so, I decided to give it a try. I was saying the other day that I never bake in my life before this and here I am, baking twice in as many weeks. I wonder why I can still spent my time to bake so much when now it is the exam period. It must have come from the exam's tension I guess.
I was not sure how would it turn out because I simply make a rough guess about the ingredients and the quantity of each of them. Fortunately for me, it was still edible. In fact, it was quite nice. Basically, the ingredients for the fudge slice remain the same, minus the raisins. As for the icing part, I just experimented with it. Here is the recipe, which I created it (the icing part) on my own. It might not suit your taste bud, so take it at your own risk.

Fudge slice
  • 1 egg
  • 100g butter
  • 1/2 cup sugar
  • 1 tsp vanilla essence
  • 225g crushed plain biscuits (malt biscuits is okay as well)
  1. In medium saucepan, add butter and sugar.
  2. Stir until butter and sugar dissolves and bubbles.
  3. Remove from heat, add vanilla and beaten egg.
  4. Then beat well and stir in crushed biscuits blending thoroughly.
  5. Press mixture well and while still warm, cover with icing.
  6. Chill it in the fridge for about two hours.

Icing

  • 5 tbsp yogurt
  • 1 tbsp sugar
  • 1 tbsp gelatin
  • 80g sliced cheese
  1. In a saucepan, combine yogurt and sugar.
  2. Stir over low heat until dissolve and add gelatin.
  3. Add the finely sliced cheese and stir until all the cheese dissolves, or until good spreading consistency for about ten minutes.
Add some water to the icing while stirring if the mixture is too dry. The amount of cheese can be increased if you love cheese a lot.
The icing part should be soft and white in colour but somehow, since I didn't get the right recipe from my junior, it turned out to have slight yellowish colour. When I made my corn pudding last time and wanted it to be yellow, it turned white. Now when I want my cheese slice to be white, it turned yellow. I think I will never have luck with these deserts, who are just trying to make fun of me.
